Our Mission

At the Villa we are dedicated to bringing you and yours a refined dining experience in a charming old-world atmosphere. Brought from our family's kitchen to your table, our rustic Italian American dishes are prepared fresh to order. Mangiare!

Villa History

Constructed in 1900 by Swedish carpenter John Lundquist, the Villa was originally transformed into the Sundance Hotel and Café, before the Romitti family operated their Roman Villa Restaurant from the 50s to the late 70s. Under the proprietorship of Linda Van Scoten Snyder, the restaurant continued to advance throughout the 80s and 90s.

Now, under new ownership, we invite you back to our restaurant to enjoy the delicious selection of food and drink we have to offer.

The Villa in Palmer Lake is ready to host any of your event needs. We can accommodate small, medium and large events.
Both food & drink menus can be personalized for any occasion. Catering is also available!

The most important ingredient in the Italian kitchen and table; which I believe most chefs forget, is Family! That is why I wanted my kitchen recipes to represent the love, passion and desire of my ancestors.

Using fresh ingredients, our love for cooking can be experienced in our chef's tasty favorites such as Italian nachos, Polenta fries, gnocchi, and pizza as well as our classic Uncle Red's beef sandwich.
